Key Lime Pie–Inspired Overnight Oat

Who doesn't like breakfast Key lime pie? These creamy overnight oats with crushed graham crackers taste like the classic dessert. Oats are topped with Key lime yogurt. 

– 2 cups old-fashioned rolled oat – 2 cups whole milk – 2 tablespoons chia seed

Ingredients:

– 1 tablespoon sweetened condensed milk – 2 1/2 teaspoons grated Key lime zest, divided – 1/4 teaspoon salt

Ingredients:

– 1/4 teaspoon vanilla extract – 1 (5.3-ounce) container low-fat Key lime–flavor strained (Greek-style) yogurt – 2 tablespoons fresh Key lime juice (from about 5 Key limes), plus 4 Key lime wedges for serving

– 1/4 cup graham cracker crumb – 1 tablespoon unsalted butter, melted – 2 teaspoons granulated sugar

Ingredients:

Preheat oven to 350°F. Line a large rimmed baking sheet with parchment paper.

Instructions:

Whisk oats, milk, chia seeds, condensed milk, 2 teaspoons lime zest, salt and vanilla together in a medium bowl until fully combined.

Split the mixture into four 8-ounce covered containers, each 3/4 cup. Blend yogurt and lime juice in a small bowl. Add 2 1/2 tablespoons of yogurt to each jar.

Refrigerate covered for 8–24 hours until the oats have absorbed the liquid and the mixture has thickened.

Mix graham cracker crumbs, butter, and sugar in a small bowl with a fork until crumbly and wet sand-like. Create an even layer on the baking sheet. Bake 5–7 minutes until aromatic and golden brown. Allow pan to cool for 15 minutes.

Instructions:

Stir yogurt into oats to serve. Sprinkle 1/8 teaspoon lime zest and 1 tablespoon graham cracker mixture on each serving. If desired, garnish with Key lime wedge.
