Mango Coconut Chia Pudding  

– 1/4 cup chia seed – 1 cup coconut milk – 1 ripe mango, peeled and diced

– 1-2 tablespoons honey or maple syrup (adjust to taste) – 1/2 teaspoon vanilla extract – A pinch of salt – Shredded coconut for garnish (optional)
