This Protein-Packed Berry Crumble Tastes Like Dessert for Breakfast

Who can resist warm berry crumble? The aroma of cinnamon and oats baking, the sweet-tart taste of berries, and the chewy-crunchy topping are sure to make your mouth wet.

 In a recent Instagram post, Catherine Perez, also known as @plantbasedrd, demonstrates how she transforms a traditional berry crumble into a breakfast-worthy dish. 

"A high-protein breakfast crumble—because crumbles don't just need to be for dessert," says Perez at the beginning of the video. 

"In fact, this is a great option for people that don't like the texture of oatmeal but still want the benefit of oats." 

Oats include beta-glucan, a fiber that has been shown to lower bad LDL cholesterol, minimize blood sugar surges, treat constipation, and help you stay fuller longer. 

"So if you want to take advantage of that fiber but actually make it enjoyable and filling, we're going to just slightly modify a classic crumble by replacing the typical flour with some plant-based protein powder,"

instructs Perez as she mixes up the crumble topping, which includes rolled oats, protein powder, minced pecans, peanut butter, maple syrup, unsweetened plant-based milk (or yogurt), cinnamon, vanilla paste, and a pinch of salt.

In a separate bowl, combine frozen mixed berries, fruit jam, and cornstarch until evenly coated. She then divides the berry mixture among small oven-safe ramekins, topping each with the crumble.
