Triple Berry Chia Seed Muffins 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners. 

In a large mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of sugar, 2 teaspoons of baking powder, and a pinch of salt. 

In a separate bowl, whisk together 2/3 cup of milk, 1/3 cup of melted butter, and 2 large eggs. 

Pour the wet ingredients into the dry ingredients and gently fold until just combined. 

Add 1 cup of mixed berries (blueberries, raspberries, and strawberries) to the batter, along with 2 tablespoons of chia seeds. 

Fold the berries and chia seeds into the batter until evenly distributed. 

Spoon the batter into the muffin cups, filling each about two-thirds full. 

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. 

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
